Cummo Casa Vinicola Sicania born by a young entrepreneur, Diego Maurizio Cummo, who inherited the family winemaking heritage accumulated under the guidance of his paternal grandfather.
Today vinification takes place with respect for family tradition together with the use of modern technology: the crushing soft that at the time of his grandfather was executed with presses/manual systems, now takes place with the use of soft presses to avoid that high temperature damage the product. The harvesting is done at night when the temperature is around 22/25ºC; the fermentation take place at controlled temperature by refrigerating in underground tanks, doing so will keep the perfume and aromas. The process of vinification is to be followed by a oenologist who is at the place as well from a team outside that is entrusted with the analysis of wine.
